Every Hungarian family has an authentic chicken paprikash recipe. It is ours. Simple and delicious.
Chicken Paprikash Recipe
Ingredients 6-7 chicken legs (preferably thighs, skin-on and bone-in) 2 tablespoons vegetable oil 1 large onions, diced half Hungarian yellow wax pepper or red bell pepper, diced 1/2 tablespoon sweet paprika powder 1 teaspoon salt 3-4 tablespoons sour cream
Heat the oil in a large pan and add the diced onion and a pinch of salt. Cook slowly until the onions are clear and glassy. Place the chicken thighs skin-side down in the pan. Cook 2 minutes on one side, until well browned, then turn them over and cook 2 minutes on the other side.
Remove the pot from the heat, add the sweet (Hungarian) paprika powder, stir. (Do not burn the paprika!) Pour in just enough water to cover.
Replace the pot on the heat. Add the diced pepper and the salt. Cover and cook it slowly for about 1 hour.
When the chicken is done, add the sour cream to the chicken paprikash sauce and mix it.
Serve with nokedli noodle or rice.
Hungarian Nokedli Recipe
Nokedli is a quick home made noodle.
Ingredients 300 g plain flour 3 eggs 150 ml water pinch of salt
Mix well the flour, the eggs, the water and the salt.
Place a nokedli grater over the pot of boiling water, and make the noodles.
When the noodles float to the top, wait about 30 seconds and drain them.
